Hi, my lovelies! Another delicious low-calorie recipe for you guys to try out! This just proves that good food can be good for you too, enjoy!
Ingredients:
Sauce:
1/4 cup olive oil
1/4 cup water 1/2 cup chopped green onions
1/2 cup cilantro leaves
2 cloves garlic (or 2 tablespoons)
1/2 teaspoon salt
2 limes
1/2 cup sour cream (or Greek yogurt)
1/2 cup tomatoes chopped up small
Chicken Spice mix:
2 teaspoons chilli powder
2 teaspoons cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 teaspoon sea salt
Extra:
500-gram chicken cut up into small cubes
3 cups shredded cucumber
8 small tortillas (flour or corn, you also get already packaged tacos that you just heat up in the oven)
Avocados
Feta cheese
Method:
Take all the ingredients listed under “sauce”, toss them together and mix thoroughly, you are welcome to blend them as well, but I prefer the chunkiness it brings to the taco. You can now mix the sauce in with the cucumber, just not all of it though, just leave enough over for extra topping. Remember to keep having little tastes of the sauce in between to get your mouth watering.
Next up mix all the spices listed together and use that to coat the chicken. Heat it up in a large pan that is just drizzled with the oil of your choice, cooking over medium heat, until your chances of obtaining salmonella are very slim. You still want the chicken slightly soft though, so make sure to taste some of that as well.
There we have it. Now all you have to do is build your taco! The best way is to start off with the avo (and because we love avo, we’re having a piece of this too), followed by the cucumber and sauce mix, then your chicken and finally your sauce and further sprinkled with feta cheese and even some black pepper.
Tip: Feel free to mix it up and get creative in the kitchen, you can chop and change according to your liking, such as adding red onions, shrimp, chillies, or whatever your heart desires. If you are aiming for low-calorie, then just make sure to add the added ingredients.
The key to this being low calorie is that you’re so full from tasting all the food that you don’t even need the taco! I’ve still attached the nutritional information, just in case.
