B's low calorie garlic, bacon, potato & leek soup

Hi, my lovelies! Here is a hearty winter warmer for you to try out. Feel free to share it and indulge completely guilt-free.
For my vegan readers, simply leave out the bacon, use vegetable stock instead of chicken stock & use an alternative vegan formulated butter.
The nutritional information per serving is as follows:
Calories: 210
Total fats: 10g
Total Carbohydrates: 22.4g
Total protein: 7.1g
Ingredients:
1 Tbsp Olive Oil
2-3 Tbsp butter
1/2 an Onion
2-3 Tbsp garlic
3 Large thinly sliced leeks
5 Medium or 4 Large Potatoes (diced)
3 Cups chicken stock
1/4 Cup white wine
2 Tsps of fresh thyme
5 Slices of bacon (cut up)
Salt and pepper to taste
Chilli flakes
If you are like me & love aesthetically pleasing food, garnish your soup with parsley and/or extra bacon (just remember to add up those extra calories)
Instructions:
Use that big pot you got for Christmas 4 years ago, or borrow your moms (a 2-quart pot should do) and heat it over medium heat. Add the olive oil and the butter and stir until melted. Now chop up that onion half and cry all your worries away. Add the onion and cook until it softens and browns slightly.
Add your leeks and potatoes next, stirring occasionally until your vegetables soften (should be around 6-8 minutes).
Add your chicken stock, your white wine (making sure to take a sip or two or three yourself), garlic, thyme, some chilli flakes, salt and pepper. Stir stir stir to combine them while getting in an arm workout for yourself. Bring the mixture to a boil and then turn the heat down to a simmer.
Cook until the potatoes are soft. This should take around 20-25 minutes, so plenty of time to do a face mask.
When the potatoes are tender and cooked, puree the soup with a hand or immersion blender. Add the bacon, season with salt, pepper and chilli flakes and warm on medium heat for five minutes while you pour yourself another glass of wine.
Serve it with some parsley and/or extra bacon and enjoy guilt-free!
